Today we are starting a food gratitude challenge series! I hope you enjoy being grateful for the cuisines that I have chosen for my gratitude expressions. I am sure I will miss one of your favorites, so just let me know and I can add a post!

I’ll start with Mexican food, which I thoroughly enjoyed last night! My friend and I are canvassing Roswell and Alpharetta for the replacement to Uncle Julio’s, which closed several years ago.

I believe my first introduction to Mexican food was Taco Bell, which was near my home growing up. They had some ridiculous 25 cent taco deal and my mom, being responsible for 4 very hungry kids, took advantage. I also recall my brother enjoying Old El Paso at the Picadilly cafeteria. We grew up near a restaurant called Taxco. As a poor teenager/college kid, nothing beats the Speedy Gonzales lunch plate (taco, enchilada and rice or beans). I ALWAYS eat too much of the free chips and salsa so that when my meal arrives, I’m stuffed.

I’m grateful for Mexican food – not high end haute cuisine fancy Mexican food. The local mom and pop dive kinda place. The place where you’re not sure if the staff speak English. Hearty, cheesy, spicy. yes, yes, YES!
