Subtitle – too much time on my hands

Every Christmas I receive a gift of a LARGE can of salted Virginia peanuts. They’re good, but there’s only one person in my household, so I struggle with eating them all. Yesterday I decided to try making homemade Peanut butter. After some googling (and texting to my sister) I decided to just jump into the deep end. The recipe is simple…some folks just grind up peanuts, nothing else. My sister suggested adding honey and peanut oil. I didn’t have any peanut oil, so I opted for vegetable oil. The problem as I see it is measurements…if you google today you’ll see people are vague on how much of anything. Sadly I can offer no clarity. I started with 2 cups peanuts and food processed the heck out of them. I then proceeded to text my sister pictures asking when to add the honey and oil and then how much of each to add. She, rightly so, said add based on taste. So I put some honey and some sugar and did some sampling. Several recipes said to switch to pulse so you don’t overheat your food processor, which I did.

Overall – ridiculously easy to make. It tastes good. The consistency isn’t quite where I want it to be. It is definitely better than the earthy crunchy consistency you get at the Natural Food stores. I could see adding a few crushed nuts to get more of a crunchy texture. Mavis approves of the flavor and texture! I’m waiting for feedback from my sister. Shout out to my Cuisinart food processor for doing all the work.
