So I decided to pick a cuisine which isn’t in my favorite list, just to see if I can be grateful…I mean it is called a challenge, isn’t it?

What can I say about Indian cuisine? I am reminded of a time 4 of us went to an Indian restaurant in Atlanta years ago. I told them I wanted it super mild. The two gents with us were being macho and basically said ‘bring the heat’. Normally after dinner out we hang out together…Let’s just say it was an early night as both guys had to excuse themselves due to some digestive issues.

Can I be grateful for Indian food? I enjoy some curries. I like curry chicken salad. I got a nice biryani dish in London once. I enjoyed making butter chicken in my instant pot. So while it isn’t in my top 10, perhaps I like Indian food more than I know. And I think really that’s what these challenges are about. Your approach to life shouldn’t be about the negative perspective (‘woe as me!’ ‘I hate this food!’,’I hate….’). It should be about finding the positive where you can and accepting what life throws out and maintaining your faith.

So yes… let’s get back to Indian food. I appreciate the bright colors in Indian dishes. While not a fan of the super spicy recipes, I love that others can enjoy it. I like how most recipes are veggie forward. I’m grateful for wait staff who know how to take it easy on folks new to the cuisine!
