Publix had a BOGO on organic strawberries this week. Of course their marketing ploy worked on me. I had a Marie Callender’s frozen pie crust sitting in my freezer, so I thought to myself, ‘How serendipitous!’ I have made strawberry pie before but I do love to google…and found this recipe. The recipe is fine. I found the jello mix made the pie taste to jello-y, so I probably wouldn’t use it again. I did make the Better Homes & Garden berry glace recipe years ago and would likely return to that one. It’s a simpler recipe.
Here – I’ve made it even simpler – Bake a pie crust (make sure you poke your fork holes in it!) according to recipe/instructions. Let cool. Place strawberries in pie crust. Pour glaze over strawberries. Refrigerate. Whip up some whip cream and BOOM! You are good to go!
To those of you Martha Stewart wanna-be’s, yes you can make your own crust. I do find pie crusts VERY easy to make with my food processor. But years ago, pre-processor, the chopping up of chilled butter into flour with two forks or two knives made me want to hurt someone. I will never judge anyone’s use of pre-made pie crusts.
It’s funny how a bite of food can transport you to a place and time. Strawberry pie reminds me of Shoney’s. My mom would treat me to a slice of pie as our special 1 on 1 time together. In a busy busy household (there were 4 kids running around – a very loud and busy house), it meant the world to me to have some alone time with her. I was/am a sensitive person and was being bullied at school. I don’t know if she knew that or just saw that I was becoming more withdrawn. Eating a special treat with my mom was my safe space where I felt secure and loved and happy.
And now it’s time for pie for dinner! What? It counts as a fruit serving and calcium with the whip cream!
