Years ago Instant Pots were ALL THE RAGE! My sister (she’s a fan of the IP yoghurt recipe, btw) convinced me to get one, even though there’s only one person in my household…so cooking up a vat of anything doesn’t particularly excite me. My hatred of leftovers is well known and is born from eating many meals 4+ nights in a row. The first night yum. The second night even better because the sauce has really settled in. But from that point on, I get a little bored. I know I can freeze the leftovers. But my freezer is where leftovers go to die. I’m sure I have some chicken soup from 5+ years ago floating in the back somewhere.

What I’ve concluded following making this recipe last night is that I like potato soup…but I really like the accoutrements to the soup more(cheese, bacon and green onion). I’ve included the link to the recipe I used but I doctored it a bit…because that is how I roll.

So first, it is important to know what ingredients you need before you head to the store. I thought I did. Then I came home and….oops. My sister is notorious for her illegal substitutions (ask her about using cornstarch instead of cornmeal in a pizza recipe! Only my dad was willing to try it). Anyway, there was a bad storm, so I wasn’t going back to Kroger. Here’s what I did differently.

  • garlic – I though I had garlic, but my garlic was ooooold and had disintegrated. So I used garlic powder. No problem.
  • thyme – I knew I didn’t have any. I also knew I had ground thyme in my spice cabinet, so I blew off fresh thyme. I get it. People want to be all gourmet-y and use fresh thyme…but what am I going to make with all the leftover thyme? Laziness won out.
  • sour cream – also an intentional act. Same logic as above for thyme. I just don’t use/eat sour cream enough. So I grabbed some whipped cream cheese and added some milk so it was more like sour cream consistency and voila. I think it worked. Do I think sour cream would have been better? probably. Was I pretty stoked that I was able to use up something in my refrigerator? definitely!

And now the good news/bad news/good news sandwich!

The good news is the soup was fine. And my sister has agreed to take some of my leftovers so that I’m not overwhelmed by potato soup.

The bad news…I read online that Instant Pot has filed for bankruptcy. How sad!

The good news is I have half and half, so my coffee was ridiculous this morning and I get to find a baking recipe using half and half!
